Vatrushki is one of the most popular dishes made from yeast dough. They can be both sweet and salty, but today we will tell you how to make delicious vatrushki with aromatic currant jam. These pies with soft, airy dough and sweet and sour filling are perfect for tea or a family dinner.
First, let's prepare the dough. In a bowl, grind 100 grams of butter margarine with 80 grams of granulated sugar. When the mixture becomes homogeneous, add three eggs and mix thoroughly. Then pour in 200 grams of cool water and continue mixing until a smooth mass is obtained.
Now you need to prepare the flour. Add 6 grams of soda to 700 grams of flour and mix well. Place flour on the work surface, make a depression in it and pour the liquid mass into it. Quickly knead the dough, trying not to over-roll it.
The dough is ready, now roll it out into a layer about 0.5 centimeters thick. Using a cutter with corrugated edges, cut out circles of about 9 cm in diameter from the dough. Carefully bend the edges of each circle upwards and pinch, forming small sides.
Prepare a baking sheet by greasing it with oil. Place the cheesecakes, leaving small gaps between them. Place currant jam in the center of each circle. For convenience, you can use a pastry bag or syringe to carefully fill with filling.
Whisk one egg in a bowl and use a culinary brush to grease the edges of the cheesecakes. Preheat the oven to 230 degrees and bake the cheesecakes for about 30 minutes, until they become golden.
Once the vatrushki are ready, carefully take them out of the oven and grease them with butter for extra shine. Cover the finished products with a cloth towel so that they cool slowly and do not become dry.
The vatrushki with currant jam are soft and aromatic. Serve them to the table, and they will become a real decoration for any tea party.
