Cheese is a universal product that combines perfectly with many ingredients. It is used to prepare various dishes, but pies with various fillings are especially delicious. They are open and closed, with different types of dough and fillings. Let's consider a few interesting variants.
cheese pie with onions
To prepare the dough you will need:
400 g flour
5 tbsp. butter
pinch of salt
For the filling:
150 g “Emmental” cheese
125 ml milk
125 ml cream
2 eggs
1 onion
2 tbsp. vegetable oil
1 tbsp. flour
1/4 tsp. salt
pinch of nutmeg and red pepper
First prepare the dough - flour is rubbed with butter, add salt and cold water, knead until a dense mass. Roll out the dough and place in a mold, cover with parchment and bake in an oven heated to 190 °C for 3 minutes.
Chop onions and fry until golden, add spices. Place half of the grated cheese on the base, then the onions, top with the remaining cheese. Eggs are mixed with milk, cream, flour, salt and nutmeg, then pour this mixture into the mold. Bake the pie at 175 °C until cooked through.
open cheese pie with ham
You will need:
142 ml cream
100 g ham
100 g cheese
2 eggs
1 tomato
salt, pepper, parsley

Eggs are beaten with cream and spices. Ham and tomatoes are cut into thin slices, cheese is grated. Place the dough on the pan, then ham, cheese and pour the egg mixture. Put tomatoes on top and bake in the oven for 8 minutes at 180 °C. After that the pie is left at room temperature for 40 minutes.

For the pastry:
200 g wheat flour
200 g rolled oats
125 g margarine
50 g hard cheese
50 g Roquefort cheese
3 tbsp. milk
1 tsp. leavening agent
1 tsp. Provencal herbs
0.5 tsp. salt
For the stuffing:
500 g chicken fillet
300 g sweet pepper
50 g hard cheese
100 g leeks
2 cloves of garlic
For the filling:
200 ml milk
100 ml cream
3 eggs
1 tsp. Provencal herbs
1/4 tsp. black pepper
5 cherry tomatoes
Bake the chicken fillets in the oven at 200 °C for 20 minutes, then cut them into slices. Prepare the dough, roll it out and bake for 8 minutes. Fry garlic, onion and sweet pepper in a frying pan. Place half of the vegetables in the mold, sprinkle with grated cheese, then chicken fillet, the remaining vegetables and cheese again. Prepare the filling, pour it into the mold, place the tomato halves and bake the pie for 30 minutes at 200 °C.
Such pies can be served both hot and chilled. They are suitable for a family dinner or a festive table.
